KISS Fish and Potato Recipe

This is my ideal fast food lunch which we have on a regular basis and it is ready to serve in ten minutes.  It keeps my blood glucose at an acceptable level and the meal is easy to make.

Ingredients:

200grams Hoki or any white fish (serves 2)

2 cups cooked sweet potato

½ cup Oat bran milk

2 cups mixed frozen green vegetables

Olive oil

Method:

Lightly spray or cover the pan with some oil. When hot, add the fish and cook for it for 3 minutes, then turn and cook for another 3 minutes or until heated right through.

Meanwhile, microwave the vegetables for 3 minutes.

Heat the sweet potato if pre-cooked, and mash with the ½ cup of Oat bran milk.

Serve immediately.

Tip: If the fish is frozen it can be thawed in the microwave for 50 seconds on high and it is ready to fry.
