Fish Stovie, or Finnan Haddie, is an old Scottish recipe made by many people living in and near fishing villages in Scotland. Quick and easy with few ingredients, the meal is ready in 20 minutes.

Ingredients:

1 large onion chopped

200grams white fish or smoked haddock

1 ½ cups milk

½ teaspoon cracked black pepper or any pepper

1 ½ teaspoons mustard powder

20grams butter or some olive oil

1 ½ dessert spoons of either oat bran flour or plain flour

1 spring onion, finely chopped

Chives, coriander and parsley flakes to flavour (optional)

Method:

In a saucepan, fry the onion in the butter or oil, then drain. Put onion to one side.

Return the oil to the pan and keep on low while preparing the sauce.

In a bowl, combine the milk, pepper, mustard, parsley and flour, then put

the mixture into the pan and stir on a moderate heat until it is of thick sauce consistency.

Chop the fish into four pieces and add to the pan along with the chopped spring onion.

Heat the fish through for 6-8 minutes, then serve with steamed vegetables.


Tip: Whereas plain flour can be bland,Oat bran flour gives a creamy texture.

This recipe can expand to 4 servings with an extra piece of fish and more vegetables
